This week, I decided to bake a northern cake for the office... Parkin!
And by all accounts, the parkin cake that I made this week went down well...
Here is the recipe so you can make it too.
Recipe
Makes: 16 squares
Ingredients:
- 225g self raising flour
- 110g caster sugar
- 1tsp ground ginger
- 1tsp bicarbonate of soda
- 1 egg
- 200ml milk
- 55g butter
- 110g golden syrup
Method:
- Preheat the oven to 150°C/300°F/Gas 2.
- Grease a deep 22cm/8" square cake tin and line with non-stick baking paper.
- Sieve the flour, sugar, ginger and bicarbonate of soda into a large mixing bowl. Make sure there are no lumps!
- In a small pan, over a gently heat, melt the butter and golden syrup until combined. Set aside.
- Beat the egg into the milk and set aside.
- Gradually pour the butter and syrup into the flour. Stir well until the mixture is well mixed.
- Pour in the egg and milk and stir until the mixture is smooth.
- Pour the mixture into the lined tin.
- Bake for about one hour, or until a skewer comes out clean from the centre of the cake.
And that's all there is too it!
Quite a simple little cake which packs lots of flavour, ideal for a hungry office waiting for their weekly bake!
